Ginger Soup

I had some rice crackers with my soup today. It’s the first thing in the last two weeks that I have eaten other than fruits, vegetables and nuts. In the end, I guess I could have done without. I am considering trying to stay gluten-free since I already have been for 16 days.

I look at my weight loss (18.5#) and think that at the beginning of the year I must have really been F.A.T.  And, I am surprised that I let my weight get that out of hand and that I set my mind to it and lost the weight.

Today’s Menu:

  • Ginger Mango Shake
  • J’s (that would be me) Fruit Salad
  • Ginger Soup
  • 1/2 Serving Rice Crax
  • Nuts and Dates
  • Coconut Curry Soup

This fruit salad that I made this morning was so excellent I just have to share it.

J’s Fruit Salad Recipe

1 Nectarine, diced
1 cup Strawberries, diced
1/2 cup bananas, sliced
1/2 cup blueberries
1/2-1 tsp basil (I used dried)
1/2-1 tsp mint (I used dried)
Juice of 1/4 lime

Mix and refrigerate for one hour before eating.
