It’s been one of those days, needing to be turned into Mojito Monday. I am going with a Pomegranate Mojito since the pomegranates are lovely right now. I needed a use for them, so the idea of this mojito was born. How beautiful is the the color of this drink? Straight pom juice, no added colorings. Even though mint is part of a traditional mojito, I did not have any. I did have cayenne though.
Use what’s readily available, that’s what I say.
Juice of 1/2 cup pomegranate seeds
3 – 4 tsp powdered sugar (I like mine on the sweeter side)
Juice from 1/4 lime
1-2 oz rum
2 dashes cayenne pepper (yep, cayenne)
Lime for garnish
Place the pomegranate seeds in a bowl. I used the back of a spoon to squeeze the juice out, then strained the seeds from the juice. Add the powdered sugar and lime juice to the pom juice, mixing until smooth. Pour into a tall glass. Add ice. Top with rum. Add two dashes of cayenne pepper. Fill up the glass with the sparkling water and mix. Garnish with the lime and serve.
